Microgreens

Each microgreen has the flavor profile of the adult plant, often with more concentrated and intense inflections and with greater nutrient densities.

For mild products such as broccoli and sunflower, the flavor profiles are earthy and nutty. Their health attributes include vitamins A, B-6, C, E, and K, calcium, iron, zinc, magnesium, copper, phosphorus, potassium, amino acids, antioxidants, and protein.

For spicy products such as mustard and radish, the flavor profiles resemble crisp and fresh pepper, strong and sharp wasabi, or radish imprints of spice and floral notes with a hint of sweetness. Their health attributes include many of the vitamins and minerals noted above plus folic acid, niacin, pantothenic acid, and carotenes.

The mixes include a broad array of mild and spicy product profiles and nutrient benefits mentioned above in a balanced blend of greens.

The colorful products add visual pop and artistic impressions to each dish with a variety of bright pinks and yellows to warm reds and dark purples.

How long will the harvested microgreens last after purchase?

Most of our microgreens will last for a couple of weeks in the right conditions, such as keeping them cool while transporting them to your kitchen, placing them in a refrigerated (35°-40°) space when not using, and preventing excessive moisture. We recommend consuming within 10 days of the harvest date for optimal freshness and nutrient retention. If you want to wash the microgreens, do so right before eating and not before storing, as moisture expedites the degradation process.

Is it better as a consumer to buy already harvested microgreens or live trays for freshness?

This is a matter of consumer preference. However, we prefer to sell the already harvested microgreens as we've fine-tuned the prime harvest window that results in peak flavor and nutrition. If you prefer live trays, you will need to maintain an optimal growth environment with continued nutrient application and be aware of when the transition into the next plant growth phase begins, which can result in a bitter taste or fibrous consistency.

What is the nutritional difference between microgreens and the mature plant / vegetable?

Several peer-reviewed journal articles are touting the increased nutrient levels of microgreens compared to the mature or adult versions of the plant/produce. The University of Maryland performed a research study (published in the Journal of Agricultural and Food Chemistry, 2012) that is widely cited based on its finding that the radish microgreen had up to 40% higher levels of the same nutrients that were in the mature radish vegetable. Several similar studies over the past decade have identified nutrient-dense microgreens as containing between 10%-40% higher levels of nutrients in a fraction of the growth timeframe for an adult plant.
